What it does
The same mechanism as any insoluble fibre: a rigid fibrous network holding water physically. Bamboo fibre is usually offered in a range of particle lengths, and the length chosen changes the result markedly. Short grades disappear into a fine product. Long grades reinforce a structure and can be used to stop a product collapsing.
Where it works
Injected and tumbled meat, because the fine grades pass an injector needle where coarser fibres block it. Coated products, for moisture control. Chocolate and confectionery, where it slows fat migration.
Where it does not
No viscosity, as with any insoluble fibre. White colour is an advantage in a pale product and a problem in a dark one. Grade selection is less forgiving than it looks, and a grade that worked in one process will not necessarily pass through another.
What it interacts with
The equipment, more than the formulation. Injector needle size and mixer type decide which grade is viable.
